By the way, did you know that this cheese is also called "the Colonel"? This name comes from the five stalks of sedge (a plant) that surround it, resembling the five stripes of a colonel. This technique isn't used for its flavor; it prevents the cheese from collapsing.
The Scallop Festival
Between October and December, Calvados celebrates the scallop. In turn, the various towns (including Courseulles and Ouistreham, very close to the hotel) organize different events. You can then witness the return of the trawlers and the fish auction. Restaurants also create special menus where even the desserts feature scallops.
